Traditional Puerto Rican Mofongo
You will need:
3 green plantains
6 cloves of garlic
1 cup of olive oil
1/2 cup of pork cracklings or bacon
Salt to taste
1/2 cup of chicken broth
Instructions
- Start by peeling the plantains and cutting them into 1-inch pieces.
- In a large frying pan, heat the olive oil over medium heat.
- Add the plantain pieces to the pan and fry until they are golden brown. Remove them from the pan and set aside.
- In a mortar and pestle, crush the garlic cloves with a pinch of salt.
- Add the fried plantains to the mortar and pestle and mash them with the garlic until a rough paste forms.
- Mix in the pork cracklings or bacon.
- Gradually add the chicken broth, continuing to mash the mixture until it is well combined and has a dough-like consistency.
- Shape the mixture into small balls or patties and serve hot.
Notes
Mofongo is traditionally served with a side of chicken broth for dipping. It can also be stuffed with meat, seafood, or vegetables for a more filling dish.
